Here is an easy dinner recipe with eggs. Eggs Barbacoa is made with beans, corn tortillas, Beef Barbacoa, fresh cilantro, pepper and eggs. This is a healthy recipe that can be served with lime wedges.
Ingredients required for Eggs Barbacoa
pinto beans, rinsed and drained: 1 (15-ounce) can
bottled low-sodium salsa: 6 tablespoons, divided
water: 2 tablespoons
Eggs: 4 large
corn tortillas: 8 (6-inch)
kosher salt: 1/4 teaspoon
hot Beef Barbacoa: 1 cup
queso fresco, crumbled: 1/2 cup (2 ounces)
freshly ground black pepper: 1/4 teaspoon
finely chopped green onions: 1/4 cup
finely chopped fresh cilantro: 1/4 cup
4 lime wedges
How to make Eggs Barbacoa
1.Process beans until smooth in a food processor.
2.Combine beans, 2 tablespoons salsa, and 2 tablespoons water in a small saucepan over low heat.
3.Stir occasionally. Keep warm.
4.Heat a large nonstick skillet over medium-high heat.
5.Lightly coat both sides of each tortilla with cooking spray.
6.Place 1 tortilla in pan.
7.Cook for 30 seconds on each side or until toasted.
9.Add water to a large skillet, filling two-thirds full and boil.
10.Reduce heat; simmer.
11.Break 1 egg into each of 4 cutard cups coated with cooking spray.
12.Place custard cups in simmering water in pan and cover pan; cook for eight minutes.
13.Remove custard cups; sprinkle salt and pepper over eggs.
14.Place 2 tortillas on each of 4 plates.
15.Top each tortilla with bean mixture (2 tablespoons).
16.Top beans with 2 tablespoons Beef Barbacoa.
17.Place 1 poached egg on each plate so it overlaps both tortillas.
18.Top each serving with salsa of 1 tablespoon.
19.Sprinkle 2 tablespoons cheese, 1 tablespoon fresh cilantro and 1 tablespoon green onions on each serving.
20.Serve along with lime wedges.
